Ingredients
  

  • 1 ½ cups all-purpose flour.[1]
  • ¾ cup granulated sugar.[1]
  • 2 teaspoons baking powder.[1]

  • ½ cup unsalted butter softened.[1]
  • 2 large eggs.[1]
  • 1 cup crushed pineapple drained (reserve the syrup).[1]
  • ¼ cup pineapple syrup from the canned pineapple.[1]
  • 2 tablespoons whole milk.[1]

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x4 inch loaf pan.[1]
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.[1]
  3. Beat in the eggs, one at a time, until well combined.[1]
  4. In a separate bowl, whisk together the flour, baking powder, and salt.[1]
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the pineapple syrup and milk. Mix until just combined; do not overmix.[1]
  6. Gently fold in the drained crushed pineapple.[1]
  7. Pour the batter into the prepared loaf pan and spread evenly.[2]
  8. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.[1]
  9. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.[2]
  10. For the glaze, whisk together the powdered sugar and enough pineapple juice or milk to reach your desired consistency. Drizzle over the cooled bread.

Notes

  • For a richer flavor, you can add ½ cup of chopped walnuts or shredded coconut to the batter.[3]
